This is a delicious savory side dish that requires just a few ingredients. The blend of parmesan, butter and roasted cauliflower make this an incredible, healthy comfort food.
1 head of cauliflower
1 cup Parmesan cheese, grated
2 – 3 tablespoons butter
Preheat oven to 400F
Trim the cauliflower head, removing the stalk and any green leaves. In a large pot, bring about 4-6 cups of water to a boil, depending on the size of your cauliflower. Add the cauliflower and boil for about 10-15 minutes or until you can easily insert a fork.
Remove from pot and allow to cool slightly.
Butter a dish that will be large enough to hold all the florets – a pie dish should work. Break the cauliflower head into florets and place them closely together in the dish so they’re snug. Place pats of the butter on top of the florets, sprinkle with salt and then add the parmesan over the top so it’s evenly covered.
Bake for 15-20 minutes or until slightly golden on top.
