The bold flavor of the pepper jack cheese really complements the sweet cornbread. It’s great served with turkey, chicken, chili or simply on its own!
1 cup milk
1 cup flour
3 teaspoon baking powder
1 cup cornmeal
5 tablespoons butter, softened
1 teaspoon salt
1 cup (1/2-inch) cubed pepper jack cheese
Preheat oven to 425. Grease a 9×9 inch baking dish.
Sift flour and baking powder in a bowl. Add milk and egg and mix until blended. Stir in the cornmeal and add remaining ingredients in order, mixing well after each addition. Spread evenly into the baking dish and bake for 20 minutes until lightly browned and when a cake tester comes out clean. Cut into squares and serve.
