This is a great winter salad that is quick and easy to make. The blended textures and flavors create a unique and tasty dish.

Serves 2 


4 – 5 watermelon radishes
4 – 5 Clementines, tangerines or mandarins

¼ cup sweet onion such as Vidalia, diced
¼ cucumber, diced
Goat or feta cheese to taste (about 2 tablespoons)
2 tablespoons toasted pine nuts, or as desired
2 tablespoons champagne vinegar
1 tablespoon extra-virgin quality olive oil
Salt and pepper to taste

Peel the watermelon radishes. Slice them thinly with a mandolin slicer or a sharp knife. Then cut in half and place in a medium bowl. Peel the Clementines, separate the pieces and add to the bowl. Add the diced onion, cucumber, cheese and toasted pine nuts. 

Combine the champagne vinegar with the olive oil and drizzle over the salad, tossing gently. Add salt and pepper to taste if needed.
