Your kids will hardly be able to tell the difference between French Fries and these delicious baked zucchini fries. They’re simple to make and out of-this-world good!

Preheat oven to 425F

Ingredients:

3 zucchini (always try to buy the smaller ones)
2 eggs, lightly beaten

½ cup grated Parmesan cheese
½ cup Panko breadcrumbs
¼ teaspoon salt
¼ teaspoon Jane’s salt or Italian seasoning

Line a baking sheet with aluminum foil and lightly spray with olive oil (or lightly drizzle oil) 

Cut the zucchini into strips about the size and shape of French Fries.

Beat the eggs in a small bowl. 

Combine the dry ingredients – Panko, Parmesan, salt and seasoning in small bowl. 

Dip a zucchini strip into the egg mix and then place in the breadcrumb mixture and roll until coated. Place on the baking sheet. 

Repeat this process until you’ve used all the zucchini. You may have 2 batches depending on the size of your zucchini and the baking sheet.

Bake for 20 – 25 minutes or until golden brown on top.
