INGREDIENTS:

1 ½ cups all-purpose flour
3 ½ teaspoons baking powder

¼ cup sugar
½ teaspoon salt
1 ¼ cups whole milk
1 egg
3 tablespoons melted butter

In a large bowl, mix the dry ingredients. In a small bowl whisk together the egg and the milk and then add to the dry ingredients, blending until just combined. It should be thick and a little lumpy but combined well. Melt the butter and add to the mixture. 

Heat a griddle over medium high heat and lightly grease with butter.  Pour the batter onto the griddle in the size and shape desired. Cook for about 3 minutes per side or until golden.
