This is what happens when a pavlova meets a key lime pie in the freezer! This delicious dessert is simple, refreshing and out of this world delicious!


1 cup whipping cream
3 small Key limes, juiced

1 egg yolk
3 teaspoons sugar
2 cups meringues, broken into small pieces

In a medium sized bowl, beat the whipping cream until stiff peaks form. Don’t overbeat. In a small bowl, combine the yolk, sugar and juice of the key limes. Gently fold the lime mixture into the whipped cream and then add the meringue pieces. Tightly cover the meringue and place in the freezer for about 20 minutes or until set. Serve in individual bowls with lime zest slice for decoration.
