As a young girl, I remember eating this fresh out of the oven at a neighbor’s house. It’s a simple, one bowl cake with a wonderful blend of spices that complement the plum preserves. This is a great cake for fall – perfect for breakfast or as an afternoon snack.

Ingredients:

2 cups brown sugar
1 teaspoon allspice

1 teaspoon cinnamon
1 teaspoon nutmeg
2 cups flour
3 eggs
1 cup vegetable oil
7 oz plum preserves
1 cup chopped pecans (optional) 

Preheat oven to 350F

Combine all ingredients at medium speed until well blended. Grease 2 medium sized loaf pans, dividing the batter equally between the two. 

Bake for 30-45 minutes

Tip:

Make sure the cake is cooked all the way through using a cake tester. It should be golden to dark brown on top.
