This is a hearty soup with a little kick, perfect for cooler weather. This can easily be made in under 20 minutes with just a few ingredients.
Ingredients:
2 strips of bacon, diced
1 medium onion, diced
2 garlic cloves, minced
1 cup chicken broth
¼ cup picante sauce
2 -15 oz cans black beans
3 tablespoons cilantro, finely chopped
Crème fraiche
In a large saucepan, cook the bacon over medium heat until slightly crispy. Add the onions and garlic and cook for about 3-5 minutes or until softened. Add the broth, picante sauce and black beans. Bring to a boil for about 3 minutes. Reduce heat and simmer for 10 minutes. Allow to cool slightly and then blend in a food processor or blender until smooth.
Reheat when ready to serve.
Garnish with cilantro and a dollop of crème fraiche if desired.
